Roasted Butternut Squash Ingredients<\/h2>\n\nButternut Squash:<\/strong> Twenty ounces of peeled and cubed squash is about two cups.<\/li>\nOnion:<\/strong> I used red onion, but a yellow one would work too.<\/li>\nOlive Oil<\/strong> for coating the vegetables<\/li>\nSalt and Pepper<\/strong> for seasoning<\/li>\nBacon:<\/strong> Chop two slices of raw bacon.<\/li>\nParmesan Cheese:<\/strong> Freshly grate a quarter cup of parmesan.<\/li>\nParsley:<\/strong> Garnish with Italian parsley or swap with sage, thyme, or chives if you prefer.<\/li>\n<\/ul>\nHow to Cook Butternut Squash<\/h2>\n\nPrep:<\/strong> Preheat the oven to 400\u00b0F, and spray a large sheet pan with oil.
