Spinach Prosciutto and Mozzarella Stuffed Pork Tenderloin is a wonderful dish for the Holidays or for any weeknight dinner.<\/span><\/p>\n\n\n\n3<\/span> cloves<\/span> garlic<\/span>, crushed<\/span><\/li>\n2<\/span> tbsp<\/span> lemon juice<\/span>, freshly squeezed<\/span><\/li>\n2<\/span> tsp<\/span> Dijon mustard<\/span><\/li>\n1<\/span> tsp<\/span> olive oil<\/span><\/li>\n1\/4<\/span> tsp<\/span> fresh ground black pepper<\/span><\/li>\n1<\/span> pound<\/span> pork tenderloin<\/span><\/li>\n1 1\/2<\/span> ounces<\/span> part skim mozzarella cheese<\/span><\/li>\n2<\/span> cups<\/span> fresh baby spinach<\/span><\/li>\n2<\/span> tbsp<\/span> chopped sun dried tomatoes<\/span><\/li>\n1<\/span> ounce<\/span> thin sliced prosciutto<\/span><\/li>\nsalt and fresh cracked pepper<\/span>, to taste<\/span><\/li>\n<\/ul>\n<\/div>\n<\/div>\n\n\n\n\nCombine crushed garlic, lemon juice, mustard, olive oil, and pepper; mix well.<\/p>\n<\/li>\n\nCut a lengthwise slit down the center of the tenderloin to within 1\/2- inch of bottom (careful not to cut all the way through).<\/p>\n<\/li>\n\nOpen tenderloin so it lies flat. On each half, make another, lengthwise slit down the center to within 1\/2-inch of bottom; cover with plastic wrap. Flatten to 1\/4-in. thickness with a mallet.<\/p>\n<\/li>\n\nRemove plastic wrap; spread 1\/2 of the garlic\/Dijon mixture on the inside of the pork. Layer the cheese, spinach, sun dried tomatoes and proscuitto on top, press down gently.<\/p>\n<\/li>\n\nRoll up pork jelly-roll style, starting with a long side. Tie the roast at 1-1\/2-inch to 2-inch intervals with kitchen string.<\/p>\n<\/li>\n\nSeason lightly with salt, and remaining garlic\/Dijon mixture. Place on a rack in a shallow baking pan.<\/p>\n<\/li>\n\nBake, uncovered, at 425\u00b0 for 25-30 minutes or until a meat thermometer reads 160\u00b0. Place under the broiler to brown the top for 5 minutes, then transfer to a serving platter or cutting board.<\/p>\n<\/li>\n\nLet stand 10 minutes before removing string and slicing.
